Course Description

This unit is intended to equip you with scientific knowledge of the nature and composition of foods and their utilization in the human body.

Objectives

By the end of this course unit you should be able to:

  1. Have acquired scientific concepts and terminologies that are necessary in the understanding of food science and nutrition in relation to the human body.
  2. Understand physical and chemical composition of food and the changes that affect it during handling
  3. Apply food science and nutrition knowledge in food and beverage production
  4. Appreciate the need for food hygiene and legislation
