Course Description

This module unit is intended to equip you with knowledge, skills and attitude to effectively manage a food production establishment. You will be involved in all aspects of food production. He/she will employ both mental and physical abilities in conjunction with available resources so as to achieve the required goals

Objectives

By the end of this module unit, you should be able to:

a) Understand the organization of food production outlets.

b) Appreciate the use of equipment and tools for a variety of food production outlets.

c) Apply international food production manipulative skills.

d) Direct operations in any food outlet profitably.

e) Evaluate the existing methods of food production in relation to meeting the expectations of the management.

f) Promote health and safety of the employees, guests and property.

g) Appreciate the need for quality food products in order to attract and maintain guests.

h) Adopt emerging trends in food and beverage production.
