Course Description

This module unit is intended to equip you with knowledge, skills and attitudes which are conductive to effective control of operations within the hospitality industry.

Objectives

By the end of this module unit, you should be able to:

  1. acquire knowledge of food and beverage and their application in different sectors of hospitality industry.
  2. demonstrate ability to apply control measures to maintain appropriate standards in food and beverage production and service.
  3. co-ordinate the activities of food and beverage control to achieve the required standards in different sectors of the hospitality industry.
  4. demonstrate ability to initiate control systems in different sectors of the hospitality industry.
  5. understand and apply the concept of labour control in the hospitality industry.
