Personality Development

Course Description

Personality may be defined as the sum total of all behavioral and mental characteristics by means of which an individual is recognized as being unique. The study of personality development helps individual to understand themselves and others for better interaction and harmonious living.

The unit examines the theories of personality, temperaments and factors influencing personality development. It also discusses life skills for psycho-social competence and living values that help an individual lead a healthy, well adjusted and productive life. Self-awareness and effective communication skills are also discussed in an attempt to help learners develop better interaction within the family and the community.

Objectives

By the end of the unit, you should be able to:

Community Development (ECDE)

Course Description

In Kenya most of the ECDE programs are owned and managed by the community. The purpose of this unit is to equip you with knowledge, skills and attitudes for effective community sensitization, mobilization and capacity building to enhance community involvement and participation in ECDE program.

Law Relating to Catering

This module unit is intended to give this trainee an overview of the law as it relates to hotel and catering business

c) Identify the correct defenses for various offenses

Instructional and Learning Approaches

Course Description

Children are curious, active and learn by doing. Children learn spontaneously through play. Children grow and develop through their senses; they look, feel, listen, smell and taste. Through play and by use of their senses, children discover new knowledge and expand their ideas as they grow. Making a child enjoy the learning experience is the hallmark of a successful instructor and educational setting. If young children are to acquire skills, knowledge and develop desired attitudes in life then relevant and appropriate instructional methods have to be adopted. This course introduces you to certain instructional methods and activities in order to acquire the necessary knowledge to organize, plan and teach these activities to children. Therefore, play provides children with opportunities to explore, manipulate and experiment. This course therefore seeks to equip the student teacher with these basic and most practical instructional skills and knowledge as it relates within an early childhood educational context.

Health, Nutrition and Care

Course Description

Health, nutrition and care are essential aspects of growth and development of children. These aspects are interrelated and necessary for healthy growth and development. This unit focuses on maternal child health, primary healthcare, safety and protection, food security, child rearing practices, common childhood diseases, HIV and AIDS prevention and management. The unit provides useful practical experiences in ECDE.

Food and Beverage Production Management

Course Description

This module unit is intended to equip you with knowledge, skills and attitude to effectively manage a food production establishment. You will be involved in all aspects of food production. He/she will employ both mental and physical abilities in conjunction with available resources so as to achieve the required goals

General Methods of Teaching Young Children and Material Development

Course Description

In order for young children to learn and enjoy the activities effectively, appropriate methods and materials need to be used. The purpose of this unit is to equip you with various methods and materials of teaching and learning in ECDE centers. The unit examines the concepts of learning and teaching environment in ECDE as well as various approaches of planning and materials development of instruction. It also highlights various techniques of motivating and sustaining children`s interests learning through play, instructional resources and knowing the children. The unit introduces you to micro-teaching.

General Psychology

Course Description

The unit examines the nature and scope of psychology as a foundation for understanding human development. Learning theories relevant to ECDE and their contributions on how children learn are discussed. In addition, key concepts in psychology such as intelligence, memory, motivation, concept formation, sensation, perception, attitudes, emotions and factors influencing learning have also been highlighted.
